Haute Chefs® Fish-Bar Sushi provides a variety of assorted soups, salads, sashimi, nigiri, and hand and cut rolls. We also do traditional Kai Seki coursed menu's upon request. - Fish Bar #1 - Toe in the Water
This option is perfect for small parties and luncheons or as an appetizer offering complimenting other foods. With this you may choose (1) salad or soup item, (3) varieties of Nigiri Sushi items and (3) varieties of hand and cut rolls from our list of options. Served w/ Edamame.
- Fish Bar #2 - Putting on the Wetsuit
This is a wonderful package for an afternoon or evening event of medium size. With this you may choose (4) varieties of Nigiri Sushi items, (4) varieties of hand and cut rolls and (1) salad from our list of options. Served w/ Edamame'.
- Fish Bar #3 -The Deep End of the Pool
This is our most popular option offering a combination of sushi nigiri, hand and cut rolls, and the finest grades of sashimi. Chefs choice for the freshest offerings prevails, but you always get the finest. With this option you may choose (4) varieties of nigiri sushi items, (4) varieties of hand and cut rolls (3) sashimi chefs-choice creations and (1) salad from our list of options. Served w/Edamame'.
- Kai-Seki Style - Swimming with the Sharks ( OMASAKE )
This is a Chefs Choice 8-10 course meal, traditionally served to royalty, recommended for small dinner parties of 20 or less. With this option you would leave it up to your chef to create his culinary works of art, putting into action his repertoire of skills, accentuating the meal with 3-4 varieties of Sake. - 4 week lead time for event.

- Spring mix salmon skin salad with miso vinaigrette - Mixed baby greens, enoki mushrooms, carrots, daikon sprouts, Salmon skin, cashew nuts, sesame seed goat cheese with miso vinaigrette.
- Sonomono Salad - Pickled cucumber salad.
- Spicy Marinated Cucumber Salad - Cucumber rings marinated in spicy chili vinegar.
- Seaweed Salad - Mixture of several kinds of seaweed in sweet rice vinaigrette.
- Chilled Japanese Noodle Salad - Chilled Japanese Soba noodles tossed with sesame, soy and vinegar dressing.
- Tofu Salad - Large cubes of tofu served with Bonito flakes, grated fresh ginger, green onion and in a mild sweet soy.

- Japanese Cobb Salad -A hearty mix of romaine lettuce tossed in a light, creamy, vinaigrette, topped with grilled albacore, scallop, Japanese omelette, carrots, cucumber, onion, and tomatoes. Topped with Kane kama, radish sprouts, and crunchy noodles.
- Seared Albacore Tataki Salad
-Mixed spring salad greens, surrounded by slices of seared tuna, topped with wasabi mayonnaise and ponzu sauce. Garnished with onions and onion sprouts.
- Orange Chicken Salad
-Fresh shredded lettuce tossed in a light citrus vinaigrette mixed with onions, mandarin orange slices and crispy won ton chips, topped with our own delicious grilled chicken.
- Fish Bar Spicy Poke Salad
-A spicy mix of tuna, yellowtail, salmon, snapper, octopus and albacore sashimi tossed in Ponzu sauce, cucumber tsunomono and field greens. Garnished with green onions, radish sprout, and sesame seeds.
- Ginger Ahi Tuna Salad
-Field greens mixed with fresh chunks of tuna sashimi and onions. Topped with ginger dressing, sprouts and sesame seeds.
